Fish Souvlaki

Halibut Souvlaki


Looking for supper on the table in less than 30 minutes? Start some rice, make the marinade/salad dressing, cut up veggies for the skewers and the salad bowl and make these fish souvlaki!


Start with about a pound of firm-fleshed fish like cod, halibut, snapper or even salmon. Cut the fish into 1" chunks. Make a quick marinade of flavourful olive oil, fresh lemon juice, oregano, garlic, salt and pepper. If you want to make a Greek salad to accompany the fish, double the marinade ingredients and put half in a salad bowl to become the dressing.

1 lemon, juiced
¼ cup olive oil
½ teaspoon dried oregano
2 cloves garlic, pressed
salt and pepper to taste


Halibut marinating
Let the fish marinate for about 5 minutes. Yep, five minutes is all you need. Don't go longer than 10 because the lemon juice will start to cook the fish. We're making souvlaki, not ceviche!


Thread the fish onto skewers, alternating with grape tomatoes and squares of peppers. I usually use metal skewers but you can use bamboo skewers if you soak them beforehand.
Ready to be broiled or grilled


Broil the skewers, brushing once with the marinade and turning them after 5 minutes. Cook them for a total of 10 minutes. The skewers can also be grilled on the barbecue. Serve them with a grinding of pepper and a squeeze of lemon juice.
